Steamed broccoli and potato salad

This
recipe is very easy and may help fussy children
eat broccoli. The lemon dressing may also
be appreciated by many adults (lemon also
helps to lower the glycaemic index of potatoes).
This recipe is my creation and is a favourite
vegetable recipe in my household - enjoy.
Ingredients
3 large pieces of broccoli
3 medium potatoes
juice of one lemon
salt
extra
virgin olive oil - quanity as desired
Method
1. Heat water in a steamer
2. Wash broccoli and trim stems. Peel potatoes
and cut into large chunks.
Place both broccoli and potatoes in steamer.
3. Steam until potatoes and broccoli are
semi-soft (about 20 minutes).
4. Place cooked broccoli and potatoes in
a large bowl.
5. Add lemon juice, salt and olive oil and
stir through.
6. Serve warm.
